Fish Stick Po' Boys

One of my absolute favorite sandwiches!

  • 20 Ounce Package Frozen Fish Sticks (About 30 Sticks)
  • 1/2 Cup Mayo
  • 2 Teaspoon Hot Sauce
  • 2 Teaspoon Lemon Juice
  • 4 Sub-Style Sandwich Rolls
  • 2 Cups Shredded Lettuce
  • 3 Tomatoes, Sliced
  • Lemon Wedges
First, spread the fish sticks out on a baking sheet, to cook, at 475 degrees, for the directed time on box.

In a small bowl, combine the mayo, hot sauce, & lemon juice; mixing well!

When the fish sticks are done cooking, remove them from the oven; replacing the fish sticks with rolls. Turn the oven off & then place the rolls in the oven, to get nice & toasty.

To make a sandwich, smear 1 side of each roll with the mayo mixture. Add a few fish sticks to one slice of roll, & top with lettuce, tomatoes, & then the other slice of bread.

Serve with lemon wedges & extra mayo mixture.

Makes about 4 servings.
