Jalapeno Poppers!

Yummy! Yummy!

In this recipe, you put the bacon INSIDE of the peppers, so you don't have try to cut through the bacon when it is baked around the outside!

  • 8 Ounces Cream Cheese
  • 1 Cup Sharp Cheddar Cheese, Shredded
  • 1 Cup M. Jack Cheese, Shredded
  • 6 Strips Bacon, Cooked & Crumbled
  • 1/4 Teaspoon Salt
  • 1/4 Teaspoon Chili Powder
  • 1/4 Teaspoon Garlic Powder
  • 1 Pound Jalapenos, Halved & Seeded
  • 1/2 Cup Dry Bread Crumbs
Combine the cream cheese, both of the cheeses, the bacon, salt, chili powder, & garlic powder together in a small-ish bowl, mixing well. Then, spoon the cheese mixture evenly into jalapeno halves & roll each pepper in the bread crumbs.

Place peppers in a greased 15x10 & bake for:
  • 20 minutes at 300 degrees for a spicyyyy pepper.
  • 30 minutes at 300 degrees for medium heat.
  • 40 minutes at 300 degrees for a mild flavor.

Serve with sour cream, onion dip, or ranch dressing!

Makes 2 dozen. Enjoy!

The Return Of Baby #2

This is Bernie.

Name Meaning: Brave As A Bear.

Perfect Fit.

She was separated from her mama & the other mares a little over a month ago. Which is totally odd in & of itself.

Since couldn't find her for days... we thought she was gone.

Then one day, out of the blue, there she was!

Bernie was is really bad shape...

We have brought her back to the corral, where she is now being called "Beautiful Bernie" every single day.

She is starting to put some weight back on, which is awesome, & she is acting more & more chipper every day.

She likes to come into the barn (note our lovely door-block).

She's very curious & likes to get into things.

She doesn't spook at hardly anything.

She nickers when you go out to see her.

She wraps her head & neck around your body, just as if she was giving you a hug.

This little squirt is so sweet, but her pure innocence is what makes her so cute.

Meaning, she's so cute, because she hasn't ticked anyone off yet.

Keepin' it real.

Chocolate-Mint Cookies... Glorious.

  • 1 Stick (1/2 Cup) Butter, Softened
  • 3/4 Cup (Packed) Brown Sugar
  • 1 Egg
  • 3/4 Teaspoon Peppermint Extract
  • 3/4 Cup All-Purpose Flour
  • 3/4 Cup Cocoa Powder
  • 1/2 Teaspoon Baking Soda
  • 1/4 Teaspoon Salt
  • 3/4 Cup Chocolate Chips
Cream the butter & brown sugar in a mixing bowl until fluffy. Add the egg & peppermint extract, & beat until combined.

Sift the flour, cocoa powder, baking soda, & salt together in a second bowl, mixing well. Then add the dry mixture to the wet stuff & mix some moreeeee...

Add the chocolate chips, scraping the bottom of the bowl to make sure everything is evenly blended!

Put spoonfuls of dough (a couple of inches apart) on a greased cookie sheet & bake 8 to 10 minutes, at 375 degrees.

Once cookies are done, be sure to immediately remove the cookies onto a wire cooling rack & enjoy with a tall glass of milk :o)

120 facts?!

Hey Y'all!

Life is good.
God is good.

Been crazy busy.

Workin' colts has been takin' up the majority of my days.. Big news there. 

The last 3 days it was in the the 70-degree range! It was so incredibly nice.. It felt more like September than August. Which is fine with me. Everyone is saying that winter is going to come early this year. I don't know...
Camera is still in the shop.. I can not express the disappointment within my soul.

Now to get to the heart of this post.
I have made a "page" (little tab thing up yonder at the top of this page) with "120 Facts" about me, myself, & I.
It has taken me quite a while to think up enough things to list, but I got'r done.
Hope y'all learn a little bit about me & my love of life.
