Grilled Apple, Bacon & Chedder Sandwiches With Roasted Red Onion Mayo

I'm tellin' y'all... delishhhhh!

For 1 Sandwich -
  • 2 Slices (1/2-inch-thick) Hearty Bread (Sourdough, Multigrain, etc.)
  • 4 Slices Tick-Cut Bacon; Cooked Crisp
  • 4 Slices Cheddar Cheese
  • 1/2 Granny Smith Apple; Cored & Sliced Thin
  • Roasted Red Onion Mayo; Recipe Follows
  • Butter
Preheat a seasoned griddle or cast iron over medium heat.

Assemble this sandwich just as you would a traditional grilled cheese:
  1. Spread 1 slice of bread with some Red Onion Mayo.
  2. Top with 2 slices Cheddar.
  3. Then the bacon & apple slices.
  4. Then 2 more slices of Cheddar.
  5. Finishing with another mayo-slathered slice of bread.
  6. Butter the outsides of the bread & trasfer to the hot grill.
Grill about 3 minutes per side, (since the sandwich is so thick!)

Remove to a cutting board & cut the sandwich in half on the diagonal to serve.


Roasted Red Onion Mayo
  • 1 Medium Red Onion; Chopped
  • 2 t. Olive Oil
  • Salt & Pepper
  • 1 c. Mayonnaise
On a small rimmed baking sheet, toss the red onion, olive oil, salt & pepper together.
Roast in the oven at 350 degrees for 25 to 30 minutes, until the onion is very soft, stirring occasionally.
Remove from oven & let cool.

Transfer to a food processor & buzz until the onion is finely chopped. Add the mayo & pulse until smooth & combined.

Balls of fun...

Supposedly, I'm a "blogger"...
Now, normally, I think this would be a little iffy to put on the World Wide Web.


But this is my blog.
& this is my life.

So this is a-okay.


This past weekend, we tested all 40 of our bulls.
Longest. Cattle. Job. Ever.

My grandpa also got both of his colts, who are out of one of our studs, "cut".
Meaning, they can no longer breed anything.
Let's just say they were quite humbled.

The first colt is a catty, little dun named, "Reno".

The vet gives the colt a shot to make them sleepy & feel good before an additional shot that puts them out. This way, they really have no recollection of what happened.
They wrap the rope around their feet, so the colt doesn't freak out & hurt anyone during this whole process.

The red & white, cotton rope in these pictures also helps the top, hind leg to stay out of the way!

I really don't know where the dogs are...



This is "Blue" - fitting name, if I do say so myself.



In this picture the bird's wings are a little blurry because he was just about to take off! I wished I would have been about a .10 of a second slower!

Frosty Coffee Pie!

  • 1/4 c. Hot Fudge Topping; Warmed
  • 1 Chocolate Crumb Crust; 9"
  • 3 c. Coffee Ice Cream; Softened
  • 5.9 oz. Instant Chocolate Pudding Mix
  • 1/2 c. Cold, Strong Brewed Coffee
  • 1/4. Cold Milk
  • 1 3/4 c. Whipped Topping
  • 1 c. Marshmallow Creme
  • 1/4 Mini Semi Sweet Chocolate Chips
Spread the hot fudge topping all over the bottom of the pie crust. Then beat the coffee ice cream, pudding mix, coffee, & milk together; spoon into crust.

The original directions don't state this, but we stick the pie in the freezer for a good 30 minutes, or so, to get it somewhat firm before spreading the topping on.

To make the topping, combine the whipped topping & marshmallow creme together & spread evenly over the top. Don't beat the living daylights out of the topping! You want it to be fluffy. Finally, sprinkle the top with the mini chocolate chips.

& EAT THAT BABY!

Well actually you are supposed to..

Cover & freeze until firm.

But whatever.

This makes 8 servings.. maybe. If you're lucky.

First "Couple" Photo Shoot!


This past week, smack dab in the middle of branding, I was able to take pictures of my cousin Justin and his wife, Toni Kay, who were my very first couple!.. to take pictures of, that is.

I took a total of 283 photos, which most turned out like these...


Somebody was talking & the other one's eyes were closed. Or...

Just totally goofy! =D


Here are SOME of the good ones! (: Both from branding & the little photo shoot.

I was super nervous, (props to them for sticking with me), but I'm really happy with how they all turned out!

They are such fabulous people, that anyone would be glad to know; so cute together!(: It's hard for me to pick a favorite!

Yay! Yay! Yay!

Whooooo Wooooo!

I am so excited about the Working Ranch Junior Magazine, that is coming out very soon!

K, Ritz, & Gem are now all famous! ;)

My homeschooling article turned out very good too!
