Green Chili Chicken Tacos

Haven't had much time to type up anything spectacular lately... Busy! Busy! Busy! Good thing I had this post pre-made! :)

  • 1 lb. boneless skinless chicken breasts, cubed
  • 1 T. oil
  • 1/4 c. onion, diced
  • 1 t. cumin
  • 1 t. garlic powder
  • 1/4 t. cayenne pepper
  • Salt & pepper
  • 1 T. flour
  • 1 c. green enchilada sauce (Las Polmas) or 1 1/4 c. green salsa (La Victoria)
  • Corn or flour tortillas
  • Lettuce, shredded cheese & sour cream
In a skillet, fry the chicken in the oil along with the onion, cumin, garlic powder, cayenne pepper, salt & pepper. Cook until chicken is browned (about 5 minutes). Sprinkle flour over the chicken & cook for 1 minute. Add green sauce, then cover & cook until chicken is done (about 7 minutes). Serve in corn or flour tortillas with cheese, lettuce & sour cream.
